White Chocolate and Lemon Souffles

Ingredients

  • 3 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • Pinch of salt
  • 3/4 cup (175ml) whole milk
  • 2 tablespoons Meyer lemon juice
  • 2 tablespoons Meyer lemon zest
  • 6 ounces (180gr) white chocolate, finely chopped
  • 5 large eggs, separated, at room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter for the ramekins
  • 1/4 cup granulated sugar and extra for the ramekins
