Ingredients
For the vanilla tapioca
- 1/3 cup large tapioca pearls
- 1 cup water
- 1 cup whole milk
- 1 tablespoon sugar
- 1/2 vanilla bean, seeded
For the milk chocolate lime cremeux
- 2 cups heavy cream
- Zest of one lime
- 5 egg yolks
- 2 tablespoons sugar
- 4 ounces good quality milk chocolate, chopped
