Squash Yogurt Soup with Panko Crusted Chicken
Ingredients
- 4 cups of peeled and chopped mixed squash
- 2 cups of peeled and chopped Granny Smith Apples
- 1 clove of garlic, minced
- 1 tablespoon extra virgin olive oil
- 2 cups chicken or vegetable stock
- 1 tablespoon low sodium soy sauce
- 1 tablespoon Sambal Olek (a chili paste)
- 3 cups water
- 2 cups fat free Greek yogurt
- 2 lean chicken breasts
- 1 beaten egg
- 1/2 cup plain flour
- 1 cup panko bread crumbs
- 1 /2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon cayenne pepper
- Vegetable oil for frying
