Soba Noodle Soup
with Shitakes and Tofu
Ingredients
- 1/4th pound soba noodles
- 6 ounces shitake mushrooms, lightly rinsed of any grit
- 1 inch piece fresh ginger, minced
- 3 garlic cloves, minced
- 1 tablespoon brown sugar
- 1/4 cup soy sauce
- 1/2 block firm tofu (or silken, whatever you have) cut into 1-inch strips
- 3 scallions, cut on the diagonal
- 1 tablespoon orange zest
- Sprinkle of sesame seeds
- 1/2 sheet nori paper, cut into thin strips
