- 3 tablespoons canola, grapeseed, or peanut oil, divided
- 1 tablespoon peeled, grated fresh ginger (from 1-inch piece)
- 1 tablespoon minced garlic
- 1 yellow onion, finely chopped
- 2 tablespoons freshly squeezed lime juice, plus 4 lime wedges for serving
- 1 tablespoon packed dark brown sugar
- 1 cup unsweetened coconut milk
- 1/4 cup roughly chopped fresh cilantro
- Cooked basamati rice, for serving (optional)
