Ingredients

  • 3 tablespoons canola, grapeseed, or peanut oil, divided
  • 1 tablespoon peeled, grated fresh ginger (from 1-inch piece)
  • 1 tablespoon minced garlic
  • 1 yellow onion, finely chopped
  • 2 tablespoons freshly squeezed lime juice, plus 4 lime wedges for serving
  • 1 tablespoon packed dark brown sugar
  • 1 cup unsweetened coconut milk
  • 1/4 cup roughly chopped fresh cilantro
  • Cooked basamati rice, for serving (optional)
