Salmon with Wasabi Sauce and Baby Bok Choy

Ingredients

  • 1/2 cup light mayonnaise
  • 1/4 cup fresh cilantro leaves
  • 3 tablespoons fresh lime juice (from 2 limes)
  • 2 to 3 teaspoons wasabi paste
  • 1 piece (1 1/2 inches long) fresh ginger, peeled and finely chopped
  • Coarse salt and ground pepper
  • 1 tablespoon vegetable oil
  • 4 skinless salmon fillets, (6 to 8 ounces each)
  • 1/2 cup mirin
  • 1 tablespoon soy sauce
  • 4 heads baby bok choy (1 1/4 pounds total), halved lengthwise
