Raspberry Rose Vanilla Cream Cake
Ingredients
For the almond rose dacquoise
- 1 1 /2 cups almonds
- 1 cup powdered sugar, unsifted
- 1/4 cup all-purpose flour
- 6 egg whites
- 1/2 cup granulated sugar
- 2 teaspoons rose water
For the raspberry layers
- 2 tablespoons powdered gelatin
- 1/4 cup cold water
- 4 cups frozen raspberries
- 1/2 cup sugar
For the vanilla bavarian cream
- 8 egg yolks
- 1/2 cup sugar
- 2 cups whole milk
- 1 vanilla bean
- 2 tablespoons powdered gelatin, sprinkled over 1/4 cup water
- 2 cups heavy cream
Lemon glaze (prepare once the cake is set)
- 1/4 cup lemon juice
- 2 tablespoons water
- 2 tablespoons sugar
- 1 teaspoon powdered gelatin sprinkled over 2 teaspoons water
