Ingredients

• 1 1/2 ounces gin
• 1 ounce St. Germain elderflower liqueur
• 1/2 ounce lemon juice
• 1/2 ounce dry vermouth
• 1/4 ounce pear eau de vie
• Pear foam
• Cinnamon for garnish
• Pear slice for garnish

Pear Foam

• 7 ounces pear nectar
• 3 ounces St. Germain elderflower liqueur
• 2 1/2 ounces egg whites
• Whipped cream canister with 2 nitrous oxide cartridges
