Peach Salad with Ginger Dressing
Ingredients
For the dressing
- 1/2 pound carrots, shredded then chopped
- 1 tablespoon fresh minced ginger
- 2 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 2 tablespoons water
- 1 tablespoon rice wine vinegar
- 1 teaspoon roasted sesame oil
- 1 teaspoon canola oil
- 1 teaspoon agave syrup
- A few dashes of sriracha
- 1/4 teaspoon salt
For the salad
- 1 package of field greens washed, I used organic
- 2 large ripe peaches, washed and sliced
- 8oz fresh mozzarella or goat cheese
