Mocha Meringue Cupcakes

Ingredients

• 1 1/2 cups (12 ounces) sugar
• 1/4 cup (2 ounces) butter
• 1 egg
• 1 egg white
• 1/4 cup vegetable oil
• 1/2 teaspoon salt
• 1 tablespoon vanilla
• 1 tablespoon white vinegar or lemon juice
• 1 3/4 cups + 2 tablespoon (8.7 ounces) flour
• 2 tablespoons cornstarch
• 1/2 teaspoon baking soda
• 1 teaspoon baking power
• 1 cup milk
• 2/3 cup (2.5 ounces) cocoa powder
• 2 teaspoon instant coffee
• 1/2 cup hot water
• 1 cup of your favourite chocolate buttercream or ganache

Coffee Meringue Frosting

• 1 tablespoon instant coffee
• 3-4 tablespoons very hot water
• 1 cup + 2 tablespoon (9 ounces) granulated sugar
• 3 large egg whites
• 1/4 teaspoon cream of tartar
• 1/8 teaspoon salt
• 1/3 cup water
• 1 tablespoon vanilla extract
