Marinated Chicken Skewers with Clementine Salsa

Ingredients

For the skewers

  • 1 1/2 pounds skinless, boneless chicken breasts or thighs, cut into 1 1/2 inch pieces
  • 1/4 cup and 2 tablespoons chopped fresh cilantro
  • 1/4 cup plain whole-milk yogurt
  • 1 tablespoon grapeseed or other neutral-tasting oil
  • 2 garlic cloves, coarsely chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric

For the salsa

  • 7-8 clementines
  • 1 tablespoon lemon juice
  • 1/2 of an English cucumber, finely chopped
  • 3 tablespoons thinly sliced green onions, divided
  • 1 serrano chile, seeded (optional) and finely chopped
  • Pinch of salt
