- 2 cups light cream, half-and-half or whole milk
- 1/2 cup grated cheddar cheese
- 1 large onion sliced
- 2 tablespoons butter
- 3 medium russet potatoes, cut in 1/4-inch slices
- 1 cup boiling water
- 1 teaspoons salt
- 1/4 teaspoon pepper
- 1 tablespoons minced flat-leaf parsley
