  • 8 (3/4-inch-thick) rib lamb chops (2 pounds total), trimmed of excess fat
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 cup thinly sliced shallot (4 ounces)
  • 1/2 cup beef broth
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons unsalted butter
  • 4 tablespoons finely chopped fresh mint
