Kale, Grapefruit and Fennel Salad
Ingredients
For the salad
- 1 bunch of lacinto kale, torn into bite sized pieces
- 1 grapefruit
- 1 head of fennel thinly sliced or shaved on a mandolin
- 2-3 dates, pitted and chopped
- ¼ cup slivered almonds
- ¼ cup mint leaves
- Salt and pepper to taste
For the dressing
- 2 tablespoon champagne vinegar
- 1 teaspoon honey
- 2 tablespoons olive oil
- ¼ teaspoon salt
