Green Garlic, Chive and Cheese Souffles with Roasted Asparagus
Ingredients
- 5 tablespoons unsalted butter, softened
- 1/2 cup (about 2 ounces) grated parmesan
- 2 stalks green garlic, finely chopped
- 2 small spring onions, finely chopped
- Salt
- Zest and juice of 1/2 a lemon
- 3 tablespoons flour
- 1 1/4 cups milk or half and half
- 4 egg yolks
- 6 egg whites, at room temperature
- 1 cup (4 ounces) grated cheese, or crumbled chevre
- 1/4 cup minced chives
