Fresh Raspberry Bars
Ingredients
- 1 cup unsalted butter (2 sticks) cut into 1-inch chunks
- 1/4 cup packed light brown sugar
- 1/2 teaspoon kosher salt
- 2 cups unbleached all-purpose flour
- Softened butter (for brushing sides of foil)
- 3/4 cup seedless raspberry jam or preserves
- 1 pint (2 cups) fresh raspberries
- 1/2 8 ounce package cream cheese, softened
- 4 ounces goat cheese or 4 ounces cream cheese
- 1/2 cup granulated sugar
- 1 tablespoon unbleached all-purpose flour
- 1 large egg
- 1 egg yolk
- 2 tablespoons finely shredded lemon peel (zest)
- 2 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon pure vanilla
- Powdered sugar
