Fresh Corn Ravioli with Herb Cream Sauce
Ingredients
For Pasta Dough
- 1 3/4 cup “00” flour or all-purpose flour
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 tablespoon water (or more or less as needed)
For Filling
- 2 cups corn kernels (cut from about 3 ears)
- 2/3 cup whole milk ricotta cheese
- 1 egg
- 2 tablespoons heavy cream
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon chopped fresh basil
- 1 teaspoon chopped fresh oregano
For Sauce
- 1/2 cup white wine
- 1/4 cup butter
- 1/4 cup cream
- 1/4 cup chopped mixed herbs (parsley, oregano, and basil)
