Fig, Mascarpone and Pistachio Tart

Ingredients

For pastry

  • 240 grams all purpose flour
  • 65 grams shelled raw pistachios
  • 50 grams sugar
  • 7 tablespoons butter, cold
  • 1 egg yolk
  • 3-4 tablespoons water, cold

For filling

  • 450 grams mascarpone cheese
  • 1/4 cup brown sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Freshly grated zest of 1 lemon

For topping

  • 2 punnets figs
  • 2 tablspoons honey
  • 2 tablespoons raspberry jam
