Salad Pita Pockets
Preparation
- 1/2 pound shrimp, peeled and deveined
- 1/2 cup plain Greek yogurt
- 3 tablespoons extra-virgin olive oil, divided
- Juice from half a lemon
- 1/2 cup chopped cilantro
- 2 teaspoons curry powder
- 1 tablespoon freshly minced ginger
- 2 teaspoons minced shallot
- 1/2 cup chopped green apple
- 1/3 cup dried cranberries
- 1/4 cup coconut shavings, lightly toasted
- 1 whole wheat pita, cut in half
- 1 pinch of coarse salt and freshly ground pepper
