Curried Apple Quinoa Salad
Ingredients
- 1 Granny smith (or other tart apple), cored & diced
- 1 cup dry quinoa
- 1/2 cup slivered almonds
- 1/2 cup dried cranberries (raisins would also work well)
- 4-5 green onions, diced
For the dressing
- 1/4 cup canola oil
- 1/2 cup coconut milk
- The juice of 1 lime
- 1 1/2 teaspoon curry powder
- Salt & pepper to taste
- 1/2 teaspoon cayenne pepper
- 1 garlic clove, smashed
