  • 2 eggplants
  • 4 tomatoes
  • 2 mozzarella, drained and finely cubed
  • 1 cup basil leaves
  • 1-1/2 cups parmesan cheese, finely grated
  • Extra virgin olive oil, as needed
  • 2/3 cup peanut oil    
  • Salt and pepper to taste
