- 1 quart(ish) homemade Andes mint ice cream or store bought mint chip ice cream
- 1/2 cup vegetable shortening
- 1 1/4 cups light brown sugar, packed
- 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- 1/2 cup dark or Dutch-processed cocoa powder, sifted
- 1/2 teaspoon instant espresso powder
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour, divided
