Ingredients
- 6 ounces spaghetti
- 1 tablespoon olive oil
- 4 pieces thick-cut bacon
- 1 small shallot, minced
- 2 garlic cloves, minced
- 8 ounces chard, leaves washed and shaken dry
- 4 ounces grated smoked mozzarella, divided
- 1 ounce grated parmesan or other hard grating cheese
- 1 tablespoon minced fresh oregano (or 1 teaspoon dried)
- Salt & freshly ground black pepper to taste
