Berry, Apple and Rosemary Shortbread Bars

Ingredients

For shortbread

  • 4 cups all purpose flour
  • 2 teaspoon  baking powder
  • 1/4 teaspoon salt
  • 1 1/2 teaspoon freshly grated meyer lemon zest
  • 2 – 4 tablespoon fresh rosemary, finely chopped*
  • 4 sticks (1 pound) butter
  • 2 cups sugar
  • 4 egg yolks

For filling

  • 10 ounces crisp tart apples, peeled, cored, and chopped
  • 1 teaspoon lemon juice
  • 2 teaspoon  sugar
  • 1 teaspoon all purpose flour
  • 1 cup blackberry + wild blueberry jam
