Ingredients
- 2 cups Israeli cous cous
- 1 pound ripe apricots
- 1/4 cup minced shallot
- 1/4 cup green onion
- 1 large handful italian parsley, chopped
- 20+ mint leaves, julienned
- 1/4 teaspoon minced fresh jalepeno
- Juice of 1 lemon
- 1/4 cup olive oil
- Salt and pepper
