Almond Joy Cupcakes

Ingredients

Cupcakes

  • 2 cups flour
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 3/4 cup Dutch process cocoa powder
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 4 eggs
  • 1 Tablespoon vanilla
  • 1 cup buttermilk
  • 1/2 cup (1 stick) salted butter, melted

Buttercream

  • 2 sticks salted butter, slightly softened
  • 1/4 cup heavy cream
  • 4 cups powdered sugar
  • 2 teaspoons pure almond extract

Ganache

  • 4 ounces semi sweet chocolate, roughly chopped
  • 1/2 cup heavy cream
  • 1/4 cup light corn syrup
  • 2 cups sweetened, shredded coconut, for garnish
