Vegetarian Pot Pies with Feta Scallion Biscuits
Ingredients
For the filling
- 3 tablespoons butter
- 1 medium yellow onion, chopped
- 1 red bell pepper, seeded and chopped
- 2 carrots, peeled and chopped
- 12 ounce baby bella mushrooms, sliced
- ¾ cup frozen peas
- 2 cloves garlic, minced
- ½ tablespoon red pepper flakes
- 6 tablespoon all-purpose flour
- 2 cups veggie broth
- Salt and pepper, to taste
For the biscuit topping
- 1½ cups all-purpose flour
- 1½ tablespoon baking powder
- ½ tablespoon salt
- Freshly ground black pepper, to taste
- 6 tablespoon cold unsalted butter, cut into pieces
- ¼ cup crumbled feta cheese
- ¼ cup chopped scallions
- ½ cup plus 1-2 tablespoons buttermilk
