Lemon Berry Mascarpone Sweet Rolls
Ingredients
For the dough
- 1 cup milk
- 2/3 cup sugar
- 1 1/2 Tablespoons rapid rise dry yeast
- 1/2 cup unsalted butter, at room temperature
- 2 large eggs
- 1/2 teaspoon lemon zest
- 1/2 teaspoon salt
- 4 1/4 cups all purpose flour, plus more for sprinkling
For the filling
- 1 1/2 cups frozen mixed berries, (mine was a mix of blueberry, raspberry, and blackberry)
- 1/3 cup sugar
- 2 Tablespoons honey
- 1 teaspoon lemon zest
- 6 ounces mascarpone cheese
- 2 Tablespoons butter, melted and cooled
For the glaze
- 1 1/2 cup powdered sugar
- 2 Tablespoons lemon juice
- 1 Tablespoon milk
