Rustic Mushroom, White Wine and Creamy Cheesy Spaghetti
Ingredients
- 1 brown onion, peeled and diced
- 3 large cloves garlic, minced
- 200 grams Swiss Brown mushrooms
- 100 grams Shiitake mushrooms
- Small handful flat leaf parsley
- 1 cup vegetable stock
- 1/2 cup white wine
- 3 sprigs thyme
- 75 grams soft goat’s cheese
- 2 1/2 heaped tablespoons light sour cream
- Salt and freshly ground black pepper
- Handful pecans, toasted and chopped
- 300 grams spaghetti
- 50 grams Pecorino (or Parmesan) plus extra for serving
- Extra virgin olive oil for serving
