Artisan Maple Oat Bread
Ingredients
Dry Ingredients
- 1 1/4 cups GF certified oat flour
- 3/4 cup millet flour
- 1/2 cup tapioca flour
- 1/4 cup and 2 tablespoons brown rice flour
- 1 tablespoon xanthan gum
- 1 1/2 teaspoons salt
Wet Ingredients
- 1/4 cup warm water (for proofing yeast)
- 1 teaspoon sugar (for proofing yeast)
- 2 1/4 teaspoons active dry yeast
- 1/2 cup maple syrup
- 1 1/2 teaspoons white wine vinegar
- 1/2 cup club soda, room temperature
- 2 eggs, beaten
- 3 tablespoons butter, melted
Topping
- 1 egg white
- 1 teaspoon warm water
- 2 tablespoons GF certified oats
