Tequila and Beetroot Bolognese with Linguini
Ingredients
- 3 tablespoons olive oil
- 1 onion finely chopped
- 1/2 a medium fennel bulb finely chopped
- 500 grams lean beef mince
- 3 cloves of garlic, crushed
- 1/4 cup of tequila
- 2 tablespoons tomato paste
- 2 cups of grated beetroot
- 1 tin of tomatoes
- 250 milileters beef stock
- 2 tablespoons of chopped fennel leaves
