Beetroot Soup

Ingredients

  • 8 medium size beetroots cut into thin sticks (julienne)
  • 1-2 medium size potatoes cut into thin sticks (julienne)
  • About 1 cup sun-dried tomatoes cut into thin slices (same size as previous)
  • Olive oil
  • Hing
  • Coarsely powdered black pepper
  • Cayenne pepper
  • Herbes de Provence (dry basil, oregano, marjoram, rosemary, thyme, sage and summer savory)
  • Salt
  • 8-12 cups whey from cheese-making
  • Kala Namak (black salt)
  • Pressed paneer cubes (optional)
  • Sour cream
