Grilled Pork Tenderloin with Pineapple and Papaya Salsa
Ingredients
Pork Loin
- 2 pounds pork tenderloins
- 2 teaspoons olive oil
- 2 teaspoons chili powder (hot-style, if desired)
- 1 teaspoon ground ancho chile pepper
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano, crushed
Pineapple and Papaya Salsa
- 8 ounces fresh pineapple, cut in 1/2-inch dice (about 1-1/2 cups)
- 8 ounces papaya, peeled and cut in 1/2-inch dice (about 1-1/2 cups)
- 2 green onions, trimmed and thinly sliced
- 1/4 cup chopped fresh cilantro
- 1 teaspoon finely shredded lime peel
- 1 tablespoon freshly squeezed lime juice
- 1 tablespoon olive oil
- 2 tablespoons pumpkin seeds (pipitas), toasted
