Baked Yams with Saffron Aioli
Ingredients
- 6 garnet yams or other sweet potatoes (about 8 ounces each)
- 3/4 cup extra-virgin olive oil
- 1/2 cup grapeseed oil or vegetable oil
- 2 whole cloves garlic, plus 1/2 small clove, finely grated
- Pinch of saffron threads, crushed
- Kosher salt
- 2 large egg yolks, at room temperature
- Juice of 1/2 lemon
- Chopped fresh parsley, for topping (optional)
