Marinated Chicken Skewers with Clementine Salsa
Ingredients
For the skewers
- 1 1/2 pounds skinless, boneless chicken breasts or thighs, cut into 1 1/2 inch pieces
- 1/4 cup and 2 tablespoons chopped fresh cilantro
- 1/4 cup plain whole-milk yogurt
- 1 tablespoon grapeseed or other neutral-tasting oil
- 2 garlic cloves, coarsely chopped
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
For the salsa
- 7-8 clementines
- 1 tablespoon lemon juice
- 1/2 of an English cucumber, finely chopped
- 3 tablespoons thinly sliced green onions, divided
- 1 serrano chile, seeded (optional) and finely chopped
- Pinch of salt
