Ingredients
For the pastry crust
- 2 1/4 cups all-purpose flour

2 sticks, cold unsalted butter, cut into 1/2 inch pieces

5-6 tablespoons cold water
For the filling
- 6 ripe peaches, skin and pits removed, sliced 1/4-1/2 inch thick
- 1/3 cup cane sugar
- 1/4 cup light brown sugar
- 1/3 cup all-purpose flour
- Juice from 1 lemon
- 10 medium to large basil leaves cut into chiffonade
- 2 tablespoon unsalted butter, cut into 1/4 inch cubes
- Egg wash
