Lime curd
- 8 tablespoons butter, cut in pieces
- 3/4 cup freshly squeezed lime juice
- 125 grams sugar
- Pinch of salt
- 3 large egg yolks
- 3 large eggs
- Zest of 2 limes
Meringue
- 3 large egg whites
- 94 grams sugar
- Pinch of salt
- Pinch of cream of tartar
- 1 teaspoon coconut extract
- Toasted sesame seeds
- Toasted coconut chips
