Red Berry Macarons
Ingredients
For the shells
- 3 egg whites
- 30 grams granulated sugar
- 200 grams powdered sugar
- 110 grams almonds
- 2 tablespoons powdered red food coloring
For the cream cheese buttercream
- 1 1/2 sticks butter at room temperature
- 4 ounces cream cheese, softened
- 3 egg whites
- 1/2 cup sugar
- 2 tablespoons water
- 1 teaspoon vanilla extract or vanilla paste or 1/2 vanilla bean split open and seeded
For the quick red berry jelly
- 1 cup raspberries
- 1 cup redcurrant
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 2 teaspoons powdered gelatin
- 3 tablespoons cold water
