Red Berry Macarons

Ingredients

For the shells

  • 3 egg whites
  • 30 grams granulated sugar
  • 200 grams powdered sugar
  • 110 grams almonds
  • 2 tablespoons powdered red food coloring

For the cream cheese buttercream

  • 1 1/2 sticks butter at room temperature
  • 4 ounces cream cheese, softened
  • 3 egg whites
  • 1/2 cup sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract or vanilla paste or 1/2 vanilla bean split open and seeded

For the quick red berry jelly

  • 1 cup raspberries
  • 1 cup redcurrant
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 2 teaspoons powdered gelatin
  • 3 tablespoons cold water
