Raspberry Rose “Hidden” Chocolate Tart

Ingredients

For pastry crust

  • 1 3/4 cups all purpose flour
  • 7 tablespoons butter, cold and cut into pieces
  • 1/4 cup sugar
  • 1 egg yolk
  • 3-4 tablespoons dried rose buds
  • 1 tablespoon rose extract
  • 1-2 tablespoons water

For “hidden” chocolate ganache filling

  • 3 ounces bittersweet or dark chocolate, finely chopped
  • 2 1/2 ounces heavy cream
  • 1/2 tablespoon butter
  • 1/2 tablespoon Godiva chocolate liquor, optional

For pastry cream

  • 1 cup whole milk
  • 1 cup heavy whipping cream
  • 1 egg
  • 3/4 cup sugar
  • 2 tablespoons all purpose flour
  • 1 teaspoon vanilla extract
