Lemon Bars with Ginger Shortbread
Ingredients
For crust
- 1/2 cup powdered sugar
- 1 1/2 cups all purpose flour
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, at room temperature
- 1/2 ounce freshly grated ginger
- 2 ounces crystallized ginger, chopped
For filling
- 1/2 cup all purpose flour
- 2 cups sugar
- Freshly grated zest of two or three lemons
- 1 cup + 2 tablespoons freshly squeezed lemon juice
- 6 large eggs
- 1 egg yolk
- Pinch of salt
