Ginger-Champagne Pancakes with Champagne-Poached Pears

Ingredients

For poached pears

  • 1 bottle of champagne (or brut rose), save 4 ounces of champagne for pancake batter
  • 1-2 cups water
  • 2 tablespoon honey
  • 4 medium ripe Bosc pears

For ginger-champagne pancakes

  • 4 ounces champagne (or brut rose)
  • 4 ounces whole milk
  • 2 eggs
  • 1/2 stick butter, melted
  • 1/2 teaspoon vanilla
  • 1 drop pink gel food coloring, if desired
  • 8 ounces flour
  • 2 tablespoon sugar
  • 2 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon salt

For syrup

  • ~1/4 cup sugar
  • 1 tablespoon butter
