- 1 bottle of champagne (or brut rose), save 4 ounces of champagne for pancake batter
- 1-2 cups water
- 2 tablespoon honey
- 4 medium ripe Bosc pears
For ginger-champagne pancakes
- 4 ounces champagne (or brut rose)
- 4 ounces whole milk
- 2 eggs
- 1/2 stick butter, melted
- 1/2 teaspoon vanilla
- 1 drop pink gel food coloring, if desired
- 8 ounces flour
- 2 tablespoon sugar
- 2 teaspoon baking powder
- 1 teaspoon ground ginger
- 1 teaspoon salt
For syrup
- ~1/4 cup sugar
- 1 tablespoon butter
