- 1/4 cup virgin coconut oil, at room temperature
- 1 cup sugar
- 2 large eggs, at room temperature
- 1 teaspoon coconut extract
- 1/2 cup plus 2 tablespoons whole milk
- 2 tablespoons coconut milk
For frosting
- 1 3/4 cups sugar
- 1 1/2 cups heavy cream
- 7 1/2 ounces unsweetened chocolate, finely chopped
- 12 tablespoon unsalted butter, cut into small pieces
- 1 1/2 teaspoons vanilla extract
- Fresh raspberries
