Berry, Apple and Rosemary Shortbread Bars
Ingredients
For shortbread
- 4 cups all purpose flour
- 2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 teaspoon freshly grated meyer lemon zest
- 2 – 4 tablespoon fresh rosemary, finely chopped*
- 4 sticks (1 pound) butter
- 2 cups sugar
- 4 egg yolks
For filling
- 10 ounces crisp tart apples, peeled, cored, and chopped
- 1 teaspoon lemon juice
- 2 teaspoon sugar
- 1 teaspoon all purpose flour
- 1 cup blackberry + wild blueberry jam
