Blueberry Sorbet Macarons

Ingredients

  • 3 cups fresh or frozen blueberries
  • 1 cup sugar
  • 2 cups water
  • Zest and juice of one lemon

For the shells: 

  • 3.25 ounces egg whites (use egg whites that have been preferably left 3-4 days in the fridge)
  • 1 ounce granulated sugar
  • 7 ounces powdered sugar
  • 4 ounces almonds (slivered, blanched, sliced, whatever you like)
  • 1 tablespoon cherry pink powdered food coloring
