Pumpkin Seed Brittle
Ingredients
- 1 teaspoon butter, or canola oil spray, for lining a rimmed baking sheet
- 2 cups turbinado sugar
- 4 ounce (8 tablespoons) butter, unsalted
- 1/3 cup light corn syrup
- 1/2 cup + 2 tablespoon filtered water
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 and 1/2 tablespoon Kosher flake salt, plus extra for sprinkling
- 1 and 1/2 cup raw pepitas/pumpkin seeds (or 12 ounce roasted, salted, unchopped nuts)
