Venere Rice Filled Tomatoes with Shrimp
Ingredients
- 4 medium tomatoes, rounded
- 4 ounces Italian black venere rice
- 1 medium-small red onion
- 1 clove garlic
- 1 tablespoon parsley, finely chopped
- A pinch of oregano
- 1 tablespoon basil leaves, finely chopped
- 2 ounces mozzarella, well drained
- 3 1/2 shrimps, fresh and cleaned (if frozen, lightly blanch before use)
- Sea Salt, freshly cracked to taste
- Black Pepper, freshly cracked to taste
