Venere Rice Filled Tomatoes with Shrimp

Ingredients

  • 4 medium tomatoes, rounded
  • 4 ounces Italian black venere rice 
  • 1 medium-small red onion   
  • 1 clove garlic
  • 1 tablespoon parsley, finely chopped 
  • A pinch of oregano  
  • 1 tablespoon basil leaves, finely chopped 
  • 2 ounces mozzarella, well drained
  • 3 1/2 shrimps, fresh and cleaned (if frozen, lightly blanch before use)
  • Sea Salt, freshly cracked to taste
  • Black Pepper, freshly cracked to taste
