Yogurt and Coconut Curried Mussels
Ingredients
- 2 1/2 pounds mussels
- 1 tablespoons olive oil
- 1 medium size red onion, finely minced
- 2 garlic cloves, finely minced
- 1 teaspoon ginger root, freshly grated
- 1/2 teaspoon turmeric
- 1/4 teaspoon cumin, ground
- 1/4 teaspoon cloves, ground
- 1/4 teaspoon nutmeg, ground
- 1/2 teaspoon kosher sea-salt
- 1/2 teaspoon black pepper, freshly ground
- 1 can light coconut milk
- 1/2 cup white rice wine vinegar
- 1/2 teaspoon cayenne pepper
- 3-4 fresh/dried curry leaves
- 1/2 cup plain non-fat greek yogurt
- juice of 2 freshly squeezed limes
- 2 tablespoons fresh cilantro, finely chopped
