Ingredients

- 3/4 cup whole milk, at room temperature
- 1/4 cup granulated sugar
- 2 1/4 cups all-purpose flour
- 3/4 teaspoon table salt
- 2 large eggs, at room temperature
- 4 tablespoons butter, at room temperature
Honey-Almond-Crunch Topping
- 6 tablespoons unsalted butter, cold is fine
- 1/3 cup granulated sugar
- 3 tablespoons honey
- 2 tablespoons heavy cream
- 1 1/2 cups (4 3/4 ounces) sliced almonds
- Two pinches of sea salt
Pastry Cream Filling
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 3 large egg yolks
- 1/4 cup granulated sugar
- 3 tablespoons cornstarch
- 2 pinches sea salt
- 2 tablespoons unsalted butter, cold is fine
