  • 2 cups light cream, half-and-half or whole milk
  • 1/2 cup grated cheddar cheese
  • 1 large onion sliced
  • 2 tablespoons butter
  • 3 medium russet potatoes, cut in 1/4-inch slices
  • 1 cup boiling water
  • 1 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 tablespoons minced flat-leaf parsley
