Chilled Beet and Beet Green Soup
Ingredients
- 1 bunch red beets (about 1-3/4 pounds)
- 1 medium red onion, trimmed and quartered
- 1 tablespoon granulated sugar
- 2 tablespoons cider vinegar; more to taste
- 1 teaspoon caraway seeds
- Kosher salt
- 5 medium cloves garlic, peeled
- Freshly ground black pepper
- 1 cup olive oil
- 2 1/2-inch-thick slices rye bread, crusts removed, cut into 1/2-inch dice
- 1/2 cup sour cream
- 1/4 cup finely chopped fresh dill
